Hello Claire, I would be glad to share my reliable method for achieving exceptionally crispy skin on a whole roasted chicken. The key to crispy skin in the oven comes down to eliminating surface moisture and roasting at a consistently high temperature.

Step 1: Dry the bird thoroughly
Moisture is the primary reason chicken skin turns rubbery instead of crisp. Remove the chicken from its packaging, take out any giblets from the cavity, and pat the exterior completely dry with paper towels. For optimal results, set the chicken uncovered on a wire rack over a rimmed baking sheet and let it chill in the refrigerator for 4 to 12 hours. This process dries out the outer layer of skin so it crisps immediately upon hitting high heat.

Step 2: Seasoning
Take the chicken out of the refrigerator roughly 30 minutes before roasting to take the chill off. Rub the entire exterior with approximately one tablespoon of olive oil or melted unsalted butter. Season the outside and the interior cavity generously with kosher salt and black pepper.

Step 3: Roasting temperature and time
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Place the chicken breast-side up in a heavy cast-iron skillet or on a roasting rack set inside a roasting pan. Roast at 425 degrees Fahrenheit for approximately 50 to 60 minutes for a standard 3.5 to 4-pound chicken. The high heat rapidly renders the fat under the skin, allowing it to turn golden brown and blister.

Step 4: Temperature check and resting
Check for doneness by inserting an instant-read digital thermometer into the thickest part of the inner thigh without touching the bone. It should register 165 degrees Fahrenheit (74 degrees Celsius). Once it reaches temperature, remove the chicken from the oven and allow it to rest on a carving board for 15 minutes before slicing. Resting ensures the juices settle into the meat rather than leaking onto the board and softening the skin.

I hope this approach serves you well for your weekly meals. Please feel free to ask if you need further clarification on any of the steps.

Spatchcock the chicken and roast at 450 F for 45 minutes on a convection setting... The high airflow makes the skin blister and crisp instantly!!!

For my weekly meal prep, I roast two birds at once using a high-heat method. Mix one teaspoon of baking powder and one teaspoon of kosher salt per four pounds of meat, rub it over dry skin, and let it sit uncovered in the fridge overnight. Roast at 450 degrees Fahrenheit on a rimmed sheet pan with a wire rack for 50 minutes until the internal temperature reaches 165 degrees Fahrenheit. This yields shatteringly crisp skin that holds up well for portioning into containers.

i tried roasting a whole bird at 400 last sunday for family dinner but its skin was still kinda soggy in spots... ive heard folks say baking powder in your dry rub pulls out the moisture for that real crispy crunch but honestly not sure how much to use or exact bake time! need to figure it out because my sunday meat-and-three needs good crackling skin...
