omg i had the same problem when i first got my stainless pan. dont worry its a learning process. the trick is all about the heat control not the pan itself.

first you need to heat the pan empty on medium. to test if its ready drop a tiny bit of water in it. if it just sizzles and evaporates its not hot enough. you need the water to form a little ball that skitters around like a mercury bead. when it does that your pan is ready.

then you can turn the heat down a little add your oil and let the oil heat up for about 30 seconds until it shimmers. then add your eggs. and yes trying to use less oil is the problem you have to use a decent amount with stainless. good luck.

Stainless steel is not like non-stick. You are correct that using too little oil is the main problem. The pan must be heated properly first before any food is added.

Heat the dry pan on medium for about two minutes. Add enough oil to coat the pan bottom and wait for it to shimmer slightly. Then add your eggs. This creates a layer that prevents sticking.

Ah, the initiation ceremony for all new stainless steel pan owners! Been there.

You definately need more oil. Make sure the pan AND the oil are hot before the egg gets anywhere near it.

the key is temperature. heat the pan first. add oil and heat the oil. then add the eggs.

you are right, trying to use less oil is the problem here. stainless steel needs it.

Your pan is too cold and you are not using enough fat.

Heat the pan first. Add oil. Let the oil heat up. Then add your eggs.
