How to Make Zucchini Soup with Meatballs
Peel the zucchini. Cut it in half lengthwise and use a spoon to scoop out the seeds and the surrounding pulp. Dice the flesh into 1.5 cm (about half-inch) cubes. Pour the all-purpose flour into a bag. Add the diced zucchini. Tie the bag and shake it well to coat the vegetables evenly with flour.
Grind the beef using a meat grinder. Add 3 tablespoons of ice-cold water to the ground meat, season with salt and pepper to taste. Mix the ground meat thoroughly. With wet hands, form small meatballs. Place the meatballs on a cutting board and put them in the refrigerator.
