Grate young zucchini using the finest attachment on a grater – you should get thin strips or noodles. Place the grated vegetables in a bowl, but do not salt them yet!
To the zucchini, add a finely chopped bunch of green onions.
Next, crack the raw eggs into the bowl and gently mix the ingredients with a spoon. The egg structure will gradually break down, creating a thick mixture with vegetable pieces.
Add the gerkules (rolled oats) and mix everything again. The rolled oats will immediately start absorbing moisture and gradually swell.
