  • 100 g carrots
  • 2 large eggs
  • 20 g fresh dill
  • 50 g all-purpose flour

How to Make Zucchini and Carrot Draniki

Cut the zucchini and scoop out the soft core with the seeds using a spoon.

First, prepare the zucchini. Small, young zucchini (courgettes) with undeveloped seeds can be used whole without peeling. Larger, mature zucchini need to be peeled. Use a vegetable peeler to remove the thin layer of skin. Cut the zucchini in half and use a spoon to scoop out the soft core with the seeds. You will be left with the firm, dense flesh for cooking.

Grate the peeled and seeded zucchini on a coarse grater or shred it using a food processor.

In my opinion, this is unnecessary for draniki (a type of Eastern European vegetable fritter), and it’s not a great idea for baking either. Why discard the beneficial moisture that doesn’t cause any harm?

Pour vegetable oil into a thick-bottomed frying pan and heat it well. Spoon the batter into the hot oil to form the draniki. One tablespoon per fritter is enough; smaller ones are easier to flip.

Fry over medium heat until golden brown on both sides. Remove the zucchini draniki from the pan and place them on paper towels to absorb any excess oil.
