This 'Winter Fairytale' Salad is a perfect example of that culinary magic. It's a colorful, flavorful mix of late-summer vegetables like cucumbers, tomatoes, and sweet peppers, all brought together in a tangy, aromatic marinade. This isn't just a recipe; it's a jar full of sunshine, ready to be opened for a festive occasion or a simple family dinner, instantly reminding you of warm, sunny days.

Ingredients for 'Winter Fairytale' Salad (Yields 3.5-4 Liters)

  • 2 kg cucumbers
  • 1 kg tomatoes
  • 500 g sweet red bell pepper
  • 100 g garlic
  • a few hot pepper pods, to taste (optional)
  • 200 g granulated sugar
  • 150 g sunflower oil
  • 35 g non-iodized table salt
  • 70 g 9% vinegar (or apple cider vinegar)
  • 5 g smoked ground paprika

How to Make Winter Fairytale Salad for Canning

Dice the tomatoes into small cubes. Optionally, you can peel the tomatoes: blanch them in boiling water for half a minute, then transfer to a bowl of cold water. Make a small incision and carefully peel off the skin. Also, remove the stem.

Add sunflower oil; the unrefined version that smells like sunflower seeds is especially delicious here. Add granulated sugar and non-iodized table salt. Pour in apple cider vinegar or 9% vinegar (a standard pickling vinegar), add smoked ground paprika or, if you like spicy salads, hot chili.

This salad is great because it’s a perfect way to use up overripe, misshapen, or crooked cucumbers that aren’t suitable for pickling or fermenting whole, but are perfect for this salad. Wash the cucumbers well. Peel and seed any overripe ones. Slice the cucumbers into thick rounds.

Roll the hot pepper pods between your palms, cut off the tip, and shake out the seeds. Slice the pepper into rings and add to the sliced cucumbers.

Bring to a boil and simmer the sauce over low heat for 10 minutes.

Cook over low heat for 5 minutes.

Pack the boiling salad into hot jars, filling them up to the shoulder.


Add the sliced cucumbers and hot pepper to the boiling sauce.

Prepare the jars. Wash the jars thoroughly with hot water and baking soda or dish soap, then rinse well. Sterilize them over steam or dry them in a hot oven for 10 minutes. You can also scald them with boiling water and dry them in the sun if it’s not dusty. Boil the lids. Pack the boiling salad into the hot jars, filling them up to the shoulder.

Seal the jars with lids. Place a cotton towel or cloth at the bottom of a large pot. Arrange the jars on the towel, ensuring they don’t touch each other. Pour in water heated to 60 degrees Celsius (140°F). Bring to a boil and sterilize for 10 minutes after the water starts boiling (for 500 ml / 1-pint jars).

Store in a dark, dry, cool place.
