How to Make a Whole Roasted Chicken in the Oven

Prepare the chicken. Remove the giblets, trim any excess fat, rinse the chicken well under running water, and then pat it dry with a paper towel to remove moisture.

Rub the outside of the chicken with regular salt and the inside with a mixture of salt and marjoram. Place 1-2 sprigs of rosemary inside the cavity.

Slice the lemon into small pieces with the peel on. Remove the seeds and membrane from the chili pepper and slice it into rings. Separate the heads of garlic into cloves. Place the lemon, pepper, and unpeeled garlic cloves inside the chicken cavity. Once the chicken is cooked, you can remove the garlic cloves; they will be very soft and can be spread on a piece of bread.

Tuck the neck skin and wings down under the body. Take kitchen twine, wrap it around the breast, loop it in a figure-eight around the legs, pull it tight, and tie a knot or a bow. You can tie the tail to the legs, but I prefer to leave the opening uncovered so the heat from the oven can penetrate the inside of the chicken.

Place the vegetables in a deep, heavy-metal roasting pan, add vegetable oil, salt, and spices to taste. Place the rack with the chicken on top. During roasting, the juices from the bird will drip onto the vegetables, making them incredibly delicious.

Preheat the oven to 200-210°C (400-410°F). Place the chicken and vegetables on the middle rack and cook for about 1 hour. If you have a kitchen thermometer, the chicken is ready when the temperature reaches 75°C (165°F) in the thickest part of the thigh.
