How to Make Tender Portuguese-Style Stewed Pork with Lentils
Cut the meat into large pieces against the grain. If the pork is fatty, it’s best to trim off the excess fat for this stew. Boiled fat isn’t the most pleasant thing to eat, in my opinion.
Make a simple marinade: sprinkle the meat with ground black pepper, add a few crumbled bay leaves, squeeze the juice from half a lemon, mix well, and let it sit for a couple of hours, or even overnight.
Place the marinated meat in a heavy-bottomed pot or a deep Dutch oven, add water, and bring to a boil.
Cover the pot and cook on low heat for about 40 minutes. The meat will be almost cooked through but still a bit tough. It will become soft and tender as it stews with the vegetables.
In a saucepan, add the red lentils and water using a ratio of 1 cup of lentils to 2 cups of cold water.
After the water boils, cook the lentils for 10-15 minutes. Then, use an immersion blender to partially blend them with the cooking liquid. You don’t need to turn it into a smooth puree; just a light blend to create a varied texture is enough. If the lentils are very soft, you can skip the blending altogether.
Heat 3 tablespoons of refined olive or vegetable oil in a skillet. Add thinly sliced onions (half-rings), and after a few minutes, add diced tomatoes and coarsely chopped sweet bell peppers.
Sauté the vegetables over high heat for a few minutes, stirring frequently.
Next, combine the prepared ingredients in the pot with the meat. All the components are unsalted at this point; we will season the dish only after everything is combined.
Add the sautéed vegetables to the meat.
Then, add the lentil puree to the pot. At this stage, season everything with salt to taste and add the smoked paprika. Cover the pot and cook on low heat for half an hour.
Serve the tender Portuguese-style stewed pork hot. Just before serving, sprinkle with ground black pepper and garnish with fresh herbs.
And there you have it—a bowl of authentic Portuguese comfort that's sure to warm you from the inside out. This stew is fantastic on its own, but for a truly complete meal, serve it with a slice of crusty bread to soak up every last drop of the delicious gravy. A simple green salad on the side can add a fresh contrast. Feel free to store any leftovers in the refrigerator; the flavors will meld together and taste even better the next day! We hope you enjoy this taste of Portugal and that it becomes a beloved recipe in your home.
