For this recipe, you can also use mature summer squash or marrows. If you do, they need to be prepared – peeled and deseeded. Use only the firm flesh for the batter.
Melt the butter and let it cool slightly. Add the eggs and melted butter to the grated zucchini. Add the granulated sugar and, if desired, vanilla extract. Mix the ingredients well with a few pulses in the blender or by hand. Let it sit for 5 minutes to allow the sugar crystals to dissolve.
Add the all-purpose flour and baking powder. You can also add some whole wheat flour to make the pie healthier: for example, 70 g of whole wheat flour plus 200 g of all-purpose flour. This way, the pie will remain fluffy, and the batter won’t be gummy.
