Carve out cups from the tomatoes. This can be done in two ways. First, you can slice off the top and use a teaspoon to scoop out the seeds, leaving only the walls. Then, carve decorative zigzags with a small knife. Alternatively, make a zigzag cut around the top part of the tomato with a small, sharp knife, remove the “lid,” and clean out the insides. Don’t discard the scraps, juice, or seeds; they can be used in a sauce or added to a soup.
