Peel the potatoes, cut them into thick rounds, and place them in a heavy-bottomed pot.

Peel the butternut squash, scoop out the seeds and fibrous strands with a spoon, and slice the flesh into medium-thick pieces. Add the chopped squash to the pot with the potatoes. Place the pot on the stove, pour in 1.5-2 liters of boiling water, and after it returns to a boil, cook over low heat for 20-25 minutes, until the vegetables for the mashed potatoes with pumpkin are soft. Do not add salt at this stage.

Meanwhile, while the vegetables are cooking, prepare the onion. Finely dice one large onion. Add a tablespoon of butter to a skillet greased with vegetable oil, then add the onion and sprinkle with a pinch of salt. Cook the onion over medium heat for about 15 minutes.
