  • 210 g spaghetti
  • 450 g frozen opyata (honey mushrooms)
  • 120 g carrots
  • 70 g onion
  • 120 g tomatoes
  • 3 cloves of garlic
  • 1 red chili pepper
  • 20 g butter
  • 15 g vegetable oil
  • 30 g hard cheese
  • salt, spices to taste

How to Make Spaghetti with Mushrooms

Place frozen opyata (honey mushrooms) in a deep pot, add 5 g of table salt, and season to taste with a bay leaf, leek or onion, and black pepper. You can also skip the spices, as the mushroom broth will be aromatic on its own. Simmer the opyata for 45 minutes over low heat with the lid on. Then, drain the cooked mushrooms in a sieve.

Heat refined vegetable oil (odorless) in a deep frying pan, add a piece of butter, then add finely chopped onion. Pour in a tablespoon of hot water. Sauté until the onion becomes translucent.

Peel the garlic cloves. Slice the hot chili pepper into rings. If you’re not a fan of spicy food, I recommend removing the seeds and membranes from the chili.

Make a cross-shaped incision on the tomatoes. Place them in boiling water for half a minute, then cool them in a bowl of ice water and peel off the skin. Finely chop the peeled tomatoes and add them to the pan. Sauté for about 7-8 minutes.

When the tomatoes have turned into a nearly smooth puree, add coarsely grated carrots and the boiled opyata. Salt to taste and cook for 15-20 minutes.

While the sauce is cooking, boil the spaghetti until done. A standard serving of spaghetti for an adult is 60-90 g. Pour 2.5 liters of boiling water into a large pot and add 2 teaspoons of salt. Add the pasta and cook according to the package directions.

Drain the cooked spaghetti in a colander, reserving a few tablespoons of the pasta water in the pot.

Add the mushroom sauce to the pasta and mix well. You can add a little more butter; it will only make the dish better.
