How to Cook Skillet Meat and Mushrooms — A Delicious Homemade Stew

Wash the pork leg, shoulder, or neck, pat it dry with a paper towel, and trim off any large pieces of fat. Cut the pork into small slices about a centimeter thick.

Pour a tablespoon of refined, odorless vegetable oil into a skillet and add the butter. Place the pork slices in the heated skillet and fry for 3-4 minutes on one side, then flip and fry until golden brown on the other side.

Thinly slice the onion into half-rings. Finely chop the garlic cloves or pass them through a garlic press. First, add the minced garlic, and after half a minute, add the sliced onion to the skillet with the browned pork.

Sauté the meat with the onion and garlic over medium heat for a few minutes until the onion becomes soft and caramelized—in other words, very delicious.

Once the onion is ready, pour the hot chicken broth into the skillet. The broth will deglaze the pan—the browned bits of meat and onion stuck to the bottom will mix with the broth, creating a base for a flavorful sauce.

If you don’t have ready-made chicken broth, you can dissolve a bouillon cube in a cup of boiling water. However, remember that bouillon cubes contain salt, so take that into account when seasoning the dish at the end.

Wipe fresh button mushrooms with a damp cloth or rinse them under cold running water. Slice the mushrooms thinly and add them to the other ingredients.

As they heat up, the moisture from the mushrooms will be released into the broth, giving the sauce a rich mushroom flavor.

In a separate small bowl, mix the all-purpose flour with a few tablespoons of warm broth. Pour this mixture into the stew and stir. Then, season with salt and freshly ground black pepper to taste. Cover the stew with a lid and cook on low heat for 20 minutes.

Five minutes before it’s done, add finely chopped parsley or any other fresh herbs of your choice.

Plate the meat and mushrooms with the sauce, sprinkle with rings of red chili pepper, and serve immediately. Boiled rice or mashed potatoes make an excellent side dish.
