How to Cook Pork Shashlik Skewers in the Oven

First, let’s make the marinade for the pork shashlik (a type of skewered and grilled meat, popular in Eastern Europe and Central Asia). Mince the yellow onion in a blender or pass it through a meat grinder. Mix the resulting onion puree with table salt (without any additives).

Peel the head of garlic. Press the cloves through a garlic press or grate them finely, and add to the onion puree.

Add the spices: ground smoked paprika and dried thyme. You can also add traditional seasonings like ground black pepper and a crumbled bay leaf.

Now, pour in about 2 tablespoons of high-quality olive oil. Even though pork contains fat, the oil film is necessary to create an appetizing, golden-brown crust.

Add smetana (a type of sour cream common in Eastern and Central Europe) and soy sauce to the marinade, mix, and taste. At this stage, you can add a small pinch of brown sugar or a teaspoon of honey.

Preheat the oven to 200°C (400°F) and cook the meat for about 50 minutes. The exact time will depend on the size of the meat chunks and the specific features of your oven. The baking sleeve allows you to visually check for doneness—as soon as the meat turns an appetizing golden-brown color, you can take the shashlik out of the oven.
