First, the potatoes need to be boiled.

Place the potatoes in a colander and let them sit for a few minutes.

Pour olive oil onto a baking sheet or into a wide skillet.


First, the potatoes need to be boiled. Peel the potatoes with a vegetable peeler. For a festive side dish, choose potatoes of a similar size; cut larger ones in half to ensure they are all uniform. Place the peeled potatoes in a pot and cover with cold water. Add salt to taste. Bring to a boil. Cook over medium heat for about 20 minutes. The potatoes are ready when a sharp knife or a toothpick can be inserted into them as easily as into butter.

Boiling the potatoes is only half the battle; now you need to let the moisture evaporate. Drain the water from the boiled potatoes. Place the potatoes in a colander and leave them for a few minutes. During this time, a lot of steam will rise from the potatoes as they dry. This will help create a beautiful golden crust.

Pour olive oil into a baking sheet or a wide skillet, add butter, and sprinkle with a dried Mediterranean herb mix. Such a mix usually contains oregano, thyme, rosemary, and other aromatic plants.
