From 500 g of raspberries, you will get about 300-350 g of pure, seedless puree.


Prepare the raspberries. To make the drink smooth and silky, you need to get rid of the raspberry seeds. Blend the fresh raspberries into a puree using an immersion blender. If you picked the berries from your own garden or bought them from a trusted seller, you don’t need to wash them – less water means a richer taste. If you buy raspberries at the market, rinse them in a colander under running water and pat them dry with paper towels.

Pour the blended raspberry puree into a colander. Using a tablespoon, press the puree through a fine-mesh sieve. Raspberry seeds vary in size, and some might slip through the sieve’s mesh. You may need two sieves – a larger one first, and a smaller one for the ‘finishing touch’.

Strain the raspberries thoroughly. From 500 g of raspberries, you will get about 300-350 g of pure, seedless puree. It all depends on the berry variety. Don’t throw away the leftover pulp. Pour the raspberry kefir into a bottle. Close the lid and store it on the bottom shelf of the refrigerator. The kefir with raspberry will be good for about 48 hours. I don’t recommend storing such drinks for longer; it’s always better to prepare a fresh batch.
