Combine the sweetened raspberry juice with the bloomed gelatin, and heat to 80-85°C (175-185°F), but do not boil. At this point, the raspberry jelly is ready; now it just needs to set. Pour the jelly into dessert bowls, ramekins, or glasses and refrigerate until fully set.
Once the jelly is set, you can whip the cream. In a tall container, combine the powdered sugar and cream stabilizer, then pour in the cold cream. Whip on high speed for several minutes, until the whisk leaves trails that hold their shape. Be careful not to overwhip the cream. If you need it to hold its shape for an hour or two, it’s better to add the stabilizer.
