How to Make Quick Bulgur with Pumpkin

Pour the bulgur into a heavy-bottomed pot, add filtered water, and a teaspoon of salt. As soon as the water boils, skim off any foam, cover with a lid, and reduce the heat.

Cook for 15-20 minutes, during which time the bulgur will absorb all the water, becoming plump and fluffy. By the way, you can store the cooked grain in the refrigerator for a couple of days and use it for salads as needed.

Peel the butternut squash, scoop out the seeds with a spoon, and cut the pulp into large cubes of roughly the same size (about 1 inch or 2-2.5 cm).

Place ghee (clarified butter) in a skillet. Once it has completely melted, add the pumpkin. Sauté the pieces over medium heat until they are golden brown. This should only take 4-5 minutes, as the pumpkin browns very quickly in ghee.

Finely chop the dill sprigs. Pluck the parsley leaves from the stems and chop them with an herb knife. Press the garlic cloves through a garlic press.

Mix the smetana (a type of sour cream) with the chopped herbs, garlic, and ground red pepper.

In late spring and early summer, if you have pumpkins left over from autumn, prepare the sauce with young garlic — it’s incredibly delicious.

Add about half a cup of cold water, salt to taste, and freshly ground black pepper. Stir the sauce well.

In addition to black and red pepper, you can also add grated nutmeg, cumin, and fenugreek to the sauce.

Add the smetana sauce to the sautéed pumpkin, shake the skillet, then cover and simmer over low heat for 7-10 minutes.

After 7 minutes, add the cooked bulgur.

Gently mix the grain with the pumpkin, being careful not to mash the pieces, and sprinkle chopped green onions on top. Heat the bulgur with the pumpkin for a few more minutes, then remove from the heat.
