How to Make Potato Salad with Egg and Herring
Peel the potatoes and carrots. Dice the vegetables into cubes about half a centimeter in size, as you normally would for a salad. Place the diced vegetables in a pot and add salt to taste. Pour in boiling water so that it covers the vegetables by a couple of centimeters; this will help it come to a boil faster.
Cook the carrots and potatoes for about 5 minutes. Test for doneness, and if they are cooked, drain them in a colander, let the water run off, and transfer them to a salad bowl. By the way, I don’t recommend throwing out the vegetable broth; you can use it to make a light oatmeal or a sauce.
Hard-boil the eggs and let them cool. Finely chop the boiled eggs or grate them, then add them to the salad. A tip for perfect hard-boiled eggs: you don’t need to boil them vigorously. Just bring the water to a boil, then turn off the heat and let the eggs sit in the hot water for 10 minutes.
Slice a small onion into thin rings and add it to the salad bowl. If you don’t like the sharp taste of raw onion, you can pour boiling water over the sliced onion and let it sit for a minute, then drain the water. This will remove the bitterness.
Dice salted or marinated pickles into small cubes. Add the diced pickles to the other salad ingredients.
Now, let’s season the salad. Add a tablespoon of finely chopped parsley. Sprinkle in some ground black pepper, a teaspoon of dried dill (optional), and add the mayonnaise.
