  • 450 g lean pork belly
  • 250 g frozen green peas
  • 120 g yellow onion
  • 150 g carrots
  • ground red pepper, caraway seeds, vegetable oil, salt, sugar

How to Cook Pork with Vegetables in the Oven

Cut the meat into serving-sized pieces, trimming off any excess fat and anything unwanted (membranes, sinews). I used boneless pork belly, which takes less time to cook.

Next, lightly tenderize the meat pieces. You can do this with the dull edge of a wide knife.

Sprinkle the meat with caraway seeds, ground red pepper, and salt. Besides pepper and caraway, you can also use dried thyme, fennel, or rosemary, or a spice blend.

Season the meat with spices


Grease a deep baking dish with vegetable oil and arrange the pork pieces in a single layer.

Cut a piece of parchment paper and cover the dish tightly. Place a sheet of foil over the parchment paper.

Preheat the oven to 170°C (340°F). Place the dish on the middle rack and cook for 35-40 minutes.

While the meat is cooking, prepare the vegetables separately for our pork and vegetable bake.

In a skillet greased with vegetable oil, sauté the finely chopped onion and thinly julienned carrots until soft. At the end, season with salt, sprinkle with a pinch of sugar, and add 3 teaspoons of balsamic vinegar.

Add the frozen green peas to the skillet with the cooked carrots, stir, and cook everything together over medium heat for 5 minutes.

Take the dish with the meat out of the oven, top it with the sautéed vegetables, stir, and return the dish to the middle rack of the oven. Increase the heat to 190-200°C (375-400°F). Cook everything together for 15 minutes.
