Ingredients for Pork Fajitas

  • 4 tortillas (thin wheat flour flatbreads)
  • 400 g lean pork
  • 100 g onion
  • 2 cloves of garlic
  • 150 g tomatoes
  • 2 red chili peppers
  • 3 g hot red pepper powder
  • 3 g smoked paprika
  • 20 ml olive oil
  • 50 g tomato puree
  • green salad leaves
  • salt, sugar, lemon

How to Make Pork Fajitas

Crush the garlic cloves with a knife, peel, and chop them. Finely chop the onion. Heat some quality olive oil in a frying pan, add the onion, then the garlic, add a small pinch of salt, and sauté until translucent.

Cut the lean pork into thin, long strips against the grain. This dish cooks quickly, so fatty pork is not suitable as it won’t taste as good.

Add the meat to the pan with the sautéed onion and fry for 4-5 minutes.

Slice the tomatoes thinly and add them to the meat and onion. If you have the time, you can peel the tomatoes, but it’s not necessary.

Now, add the tomato puree, ground hot red pepper, smoked paprika, and fresh chili peppers. Cut the chili peppers in half lengthwise and add them with the seeds – this is Mexican cuisine, after all!

Add salt to taste (use one without additives), and a small pinch of sugar to balance the flavors. Simmer everything together for 10-12 minutes, then remove from the heat.

By the way, tortillas are very easy to make at home. All you need is to mix three cups of flour with a small piece of margarine, salt, baking powder, and a cup of hot water. Knead the dough, roll out round flatbreads, and cook them on a dry pan. Don’t overcook them; they need about a minute on each side! The tortillas should be pale with light brown spots.

Place the pork stew on a tortilla, generously pour the thick sauce from the pan over it, and add the chili peppers.

Add fresh salad leaves, drizzle everything with freshly squeezed lemon juice, add a lemon wedge, and serve immediately.

Pork Fajitas

From history: Fajitas and burritos are close relatives; the only differences are in the way the ingredients are served and cut. For fajitas, the meat is cut into thin strips, which is what gave the dish its name. In Spanish, “faja” means strip, as cowboys were given scraps of meat which they cooked and wrapped in unleavened corn tortillas.
