Ingredients for Pollock in Polish-Style Sauce

  • 1 kg (2.2 lbs) frozen pollock
  • 150 g (1 large) onion
  • 150 g (2 medium) carrots
  • 5 chicken eggs
  • 20 g (1.5 tbsp) butter
  • 80 ml (1/3 cup) heavy cream
  • salt, pepper, bay leaf to taste
  • sweet paprika, fresh herbs for garnish

How to Make Pollock in Polish-Style Sauce

Thaw the fish, descale it, cut off the tails and fins, and remove the innards (if any). Cut the fish, including the backbone and bones, into pieces about 10 centimeters (4 inches) wide.

Prepare the vegetables. Finely chop the onion.

Coarsely grate the fresh carrot or cut it into thin strips.

Place a piece of butter at the bottom of a heavy-bottomed pot or a deep Dutch oven. Add the finely chopped onion, then the grated carrot.

Place the fish pieces on top of the vegetables and cover everything with cold water. Add salt to taste, a bay leaf, and a few black peppercorns.

Cover the pot tightly with a lid and cook on low heat for 20 minutes after it comes to a boil. This is enough time to cook almost any type of fish.

Remove the cooked fish from the pot and take out the bay leaves. Place the sauce back on the stove, reduce for 10 minutes, then blend with an immersion blender or press through a sieve until you get a smooth consistency similar to thin sour cream.

Add the grated eggs and heavy cream to the pot, bring to a boil, and remove from the heat. You can use smetana (a type of sour cream common in Eastern and Central Europe) instead of cream, but it must be fresh. Do not boil the sauce for long with smetana, as it will curdle.

Separate the fish from the bones and place it in a deep dish. Carefully pick through it to ensure no small bones are left, especially if children will be eating the dish.
