- 20 ml olive oil (+ oil for searing meat)
- 20 g pork fat
- 3 g turmeric
- 3 g ground paprika
- 5 g fenugreek seeds
- bay leaf, dried thyme, salt
How to cook Pork Plov with Dried Apricots and Cherry Tomatoes
First, prepare the meat. Cut the chilled boneless pork into pieces about 2 centimeters in size. Pat the meat pieces dry with a paper towel and sear them in well-heated refined olive oil for 1-2 minutes on each side.
In a dutch oven, heat the odorless olive oil (you can use any vegetable oil) and pork fat. Add finely chopped onion, crushed garlic cloves, and a chili pepper sliced into rings to the heated fat.
Dice the carrots into 1-centimeter cubes and sauté with the onion for 5-6 minutes.
Place the pieces of pork on top of the sautéed vegetables.
Wash the white rice under cold running water and dry it on a towel. For plov (a traditional rice pilaf), use long-grain parboiled or basmati rice. The rice must be of high quality, otherwise you will end up with a sticky rice porridge instead of plov.
Sprinkle the rice over the meat and add 2 bay leaves.
Place the cherry tomatoes on top, pressing them down so they are submerged.

Pour cold water into the dutch oven so that it covers the contents by 1 centimeter. Add the thoroughly washed kuraga (dried apricots).
Place thyme sprigs on top, cover tightly, and bring the contents to a boil over high heat.
Reduce the heat to the minimum, cover the dutch oven tightly, and cook for 1 hour without opening the lid.
