How to Cook Pearl Barley with Meat and Mushrooms
Sort through the pearl barley and rinse it thoroughly in cold water. Soak the rinsed barley in cold water for 10-12 hours. Drain the water, transfer the barley to a sieve, and rinse it again under running water. Leave the rinsed barley in the sieve to let the water drain.
Prepare the other ingredients. Cut the lean pork into cubes about one and a half centimeters in size. Finely chop the onion. Slice the garlic cloves thinly; in the summer, you can replace the cloves with garlic scapes.
Pour a few tablespoons of refined, odorless vegetable oil into a deep wok-style pan or a braising pan. Add the meat pieces to the heated oil and fry over high heat until golden brown.
If your pan is small, fry the meat in small batches. Transfer each batch to a bowl before frying the next one.

Place a few bay leaves on top. Salt to taste.
Boil some water. Pour the boiling water into the pan so that it covers the contents by about one and a half centimeters. If you add more water, the pearl barley won’t be fluffy and you’ll end up with a mushy porridge.
Bring to a boil over high heat. Then cover with a lid that has a steam vent. Reduce the heat to the minimum. Cook on low heat for 45-60 minutes; the cooking time depends on the quality of the meat. By the end, the meat should be tender, and the pearl barley should remain fluffy.
Serve the pearl barley with meat and mushrooms hot. Sprinkle with finely chopped parsley.
