Homemade cookies are the ultimate treat for friends and the simplest dessert to enjoy with family over a cup of tea. Try these tender oatmeal cookies with roasted peanuts—they are irresistibly delicious! Using basic pantry staples, you can whip up a wonderful treat in just half an hour. The secret to this recipe lies in the contrast between the crunchy roasted peanut crumb and the soft texture of rolled oats, which fill the house with a cozy, warm vanilla aroma as they bake. Oatmeal cookies are a home-baking classic, and adding peanuts gives them a modern twist and extra richness.
Ingredients
- 110 g (approx. 1/2 cup) unsalted butter
- 1 small egg
- 60 g (1/2 cup) powdered sugar
- 80 g (2/3 cup) all-purpose wheat flour
- 80 g (approx. 1 cup) quick-cooking rolled oats
- 70 g (1/2 cup) roasted blanched peanuts
- 3/4 teaspoon baking powder
- 1/2 teaspoon vanilla powder (or vanilla extract)
- Powdered sugar, for dusting
How to Make Peanut Oatmeal Cookies
Take the butter out of the refrigerator in advance and let it sit at room temperature until softened. Add the powdered sugar and vanilla powder (or vanilla extract) to the softened butter.
Cream the butter and powdered sugar together with a whisk or spatula for several minutes until it forms a pale, creamy paste.
Crack a small egg into the bowl. Make sure all ingredients for this dough are at room temperature.
Whisk the egg into the butter and powdered sugar mixture until smooth. If the egg is cold at this stage, the butter will quickly chill and curdle, giving the mixture a speckled, broken appearance. That is why bringing your ingredients to room temperature is essential.
Pulse the roasted blanched peanuts in a blender or food processor until finely ground. Add the ground peanuts and quick-cooking rolled oats to the wet mixture.
Combine the all-purpose flour and baking powder in a separate bowl. Sift the flour mixture through a fine-mesh sieve directly into the dough.
Fold the dough together quickly. Unlike yeast dough, shortbread-style cookie dough shouldn’t be overworked—simply bring the ingredients together and mix for just a couple of minutes.

Quickly fold all the ingredients together. Shortbread-style oatmeal dough does not require long kneading.
Line a baking sheet with silicone-coated parchment paper; there is no need to grease it. Using a measuring scoop or kitchen scale, portion the dough into pieces weighing about 30 g (1 oz) each. Lightly oil your palms with vegetable oil and roll the portions into balls. Arrange the cookies spaced well apart on the sheet, then gently flatten them into rounds.
Preheat your oven to 180°C (350°F). Place the baking sheet on the middle rack of the preheated oven and bake for 18–20 minutes. After 10 minutes, rotate the baking sheet 180 degrees to ensure even baking. Baking time depends on your specific oven and may vary slightly from the recipe. Keep a close eye on them! The cookies are done when they turn a light golden brown.
Cool the cookies directly on the baking sheet, then dust them with powdered sugar through a fine-mesh sieve.
Store the roasted peanut oatmeal cookies in an airtight tin or glass jar. Never pack the cookies away while they are still warm, or they will trap steam and lose their crispness.
Brew some coffee or tea, invite your friends over, and treat yourselves to delicious homemade cookies. To highlight the nutty flavor, serve these peanut oatmeal cookies with a glass of cold milk or rich hot cocoa. If you feel like experimenting next time, fold a handful of dark chocolate chips or raisins into the dough to make the flavor even more complex. To preserve their ideal texture, store the cooled cookies in an airtight container or cookie tin. This prevents them from drying out while keeping their crisp exterior intact. Remember to let the cookies cool completely before storing them, otherwise they will steam and lose their delightful, tender crumb.
