How to Make Peanut Butter with Honey and Dark Chocolate
Break the dark chocolate bar into small pieces. You can melt the chocolate in a water bath, in the microwave, by placing the bowl in a slightly warm oven, or in the summer, you can even leave the bowl in the sun. There’s no need to overheat the chocolate; 30-35°C (86-95°F) is enough to make it soft.
Honey also doesn’t like high temperatures. Liquid honey doesn’t need to be heated, but if it’s crystallized, you’ll need to melt it gently. Add the honey to the dark chocolate.
Melt the chocolate with the honey and set it aside in a warm place to prevent the ingredients from solidifying again.
Spread the blanched peanuts on a baking sheet. Place the sheet in an oven preheated to 180°C (350°F). Roast the peanuts until they are a light golden color, for about 7-8 minutes. It’s a good idea to shake and turn the baking sheet to ensure the nuts roast evenly.
Let the roasted peanuts cool to room temperature. Pour the roasted nuts into a blender.
Blend the peanuts for about 5 minutes. At first, the peanuts will turn into a crumbly mixture, then gradually transform into a paste. When the paste starts to clump around the blade, you can add the other ingredients. The consistency is up to you – whether you prefer it chunky with pieces of nuts or smooth as butter, it’s your choice. Ultimately, it depends on the power of your blender.
Add a neutral, refined vegetable oil to the peanut butter. You can increase or decrease the amount of oil, again depending on your desired consistency. So, add the oil one tablespoon at a time, blend, and see what you get. If possible, try making it with peanut oil.
Soak the pitted dates in hot water for a couple of minutes, then rinse them thoroughly and pat them dry. Chop the dates finely and add them to the peanuts.
Blend everything well again until a smooth, thick paste forms.
Add the melted chocolate and honey mixture. At this stage, you can add half a teaspoon of ground cinnamon or a teaspoon of vanilla extract, or both, to taste.
Blend the ingredients for 3 more minutes, and your peanut butter with honey and dark chocolate is ready.
Transfer the paste to a dry glass jar with a tight-fitting lid. Store it in the refrigerator. Peanut butter made with this recipe can be stored for up to 10 days.
For breakfast, make two slices of toast, spread one with peanut butter and jam, and top it with the other. You’ve never tried such a delicious sandwich!
And there you have it—a jar of homemade happiness! This dark chocolate and honey peanut butter is incredibly versatile. Spread it on warm toast, swirl it into your morning oatmeal, use it as a dip for apple slices, or simply enjoy a spoonful straight from the jar. Feel free to experiment by adding a pinch of sea salt to enhance the chocolate flavor or a dash of cayenne for a spicy kick. Stored in an airtight container in the fridge, it makes for a wonderful, thoughtful homemade gift. Enjoy every nutty, chocolatey bite!
