This delicate, creamy oven-roasted vegetable pâté is a true gem for anyone who loves natural, well-balanced appetizers. Neutral zucchini forms a lush base, while roasted apples and sweet red bell peppers create a unique fruity-vegetable harmony. A special depth of flavor comes from asafoetida—an ancient Eastern spice that, when heated, fills the kitchen with a cozy aroma reminiscent of fried onions and garlic. Slowly roasted in the oven, the vegetables caramelize and develop a silky texture, blending into an elegant spread perfect for morning toast or a light lunch.

Our tender and aromatic vegetable pâté is ready! Serve it with crispy toast or fresh bread as a wholesome, delicious appetizer.

How to make oven-roasted vegetable pâté
Peel the zucchini and scoop out the spongy center with the seeds. Chop the peeled zucchini into large cubes.

Young zucchini are best for this pâté, but if yours are mature, be sure to peel the skin and remove any tough seeds.
Gather all your vegetables on a baking sheet or in a deep roasting pan. Start by spreading out the chopped zucchini.

Spread the zucchini as the first layer in your baking pan—they will form the juicy base of our future pâté.
Slice the onions into thick wedges and add them to the pan. Avoid dicing them finely, as they might burn during roasting. Cut small onions into halves or quarters.

Slice the onions thickly so they don't burn during the long roasting time, allowing them to slowly release their juices into the vegetables.
Peel an entire head of garlic, halve the cloves, and toss them into the roasting pan along with the onions.

Garlic adds a wonderful piquancy and unique aroma to the vegetables that beautifully unfolds in the hot oven.
Core the sweet-and-sour apples, slice them into thick wedges, and arrange them on top of the vegetables.

Sweet-and-sour apples are the secret ingredient that perfectly balances the savory vegetables and adds a tender texture to the pâté.
Halve the sweet red bell peppers, remove the stems and seeds, and rinse well. Roughly chop the peppers and add them to the mix.
Drizzle the vegetables with vegetable or regular olive oil. Save your expensive cold-pressed extra-virgin olive oil for salads; a standard roasting oil works best here.
Season with salt and sugar to taste. I typically use 1 to 1.5 level teaspoons of salt and 2 to 3 level teaspoons of sugar. It is always better to under-season now, as you can easily adjust the flavors later.

A touch of sugar helps the vegetables caramelize, giving the pâté a much deeper and richer flavor profile.
Sprinkle in the sweet paprika and asafoetida (a pungent Eastern spice often used as a garlic-onion substitute). While it might seem unusual, it pairs exceptionally well with vegetables. Toss everything thoroughly so the oil and spices evenly coat the pieces, preventing them from burning in the hot oven.

Asafoetida and paprika are perfect flavor allies for roasted vegetables. Toss everything thoroughly so the spices distribute evenly.
Preheat your oven to 180°C (350°F). Roast the vegetables uncovered for about 50 minutes, allowing the excess moisture to evaporate. Stir the mixture two or three times during baking to ensure perfectly even roasting.

After 50 minutes in the oven, the vegetables become incredibly soft and aromatic. All excess moisture should be evaporated.
Transfer the roasted vegetables to a blender and process for a few minutes until beautifully smooth and creamy. The vegetables will be incredibly tender, almost like a puree already, so this takes no time.

Blend the roasted vegetables thoroughly until the mixture reaches an absolutely creamy and smooth consistency.
Spoon the freshly blended roasted vegetable pâté into a clean, dry jar. Let it cool completely before storing it in the refrigerator.

Transfer the finished pâté into a clean glass jar. Once cooled, it will become even thicker and more flavorful.
Serve this oven-roasted vegetable pâté on a slice of toasted yeast-free bread or a whole-grain baguette. For a wonderful textural contrast, top your crostini with toasted sunflower seeds or crushed walnuts. If you prefer a bit of heat, mix a pinch of chili flakes or a squeeze of fresh lemon juice right into the spread before serving to beautifully offset the sweetness of the roasted ingredients. To keep your pâté fresh, store it in a tightly sealed glass jar in the refrigerator. Because it contains no highly perishable ingredients, it will maintain its fantastic flavor for 3 to 4 days. This versatile spread makes a brilliant quick snack or a wholesome, fiber-rich addition to a rice or spelt side dish, naturally enhancing your meal without any empty calories.
