How to Make Oven-Baked Potatoes
For this baked potato recipe, you should choose your potatoes carefully. Select large, oblong tubers with no visible damage. If you’re making a specific number of servings, I recommend adding a few extra potatoes, just in case you find any surprises inside.
Thoroughly wash the tubers with a brush, but do not peel the skin!
Place the potatoes in a deep pot, cover with boiling water, and cook for 20 minutes.
Slice a thin layer off the top of each potato, then carefully scoop out the middle with a spoon, leaving a wall about a centimeter thick. Create these “boats” from all the potatoes.
Finely chop the onion. Pour a tablespoon of olive oil into a frying pan, add the butter, and melt it. Add the chopped onion to the melted butter and sprinkle with a pinch of salt. Cook the onion for 10-12 minutes until it turns a caramel color.
Finely chop the scooped-out potato flesh and add it to the pan with the onion – this is the base of our baked potato filling.
Now, season the baked potato filling – add dried thyme, 2-3 teaspoons of dried carrot, and paprika. Salt to taste and mix well.
Pour the remaining olive oil onto a non-stick baking sheet and place the potato boats on it. Coat the boats in oil on all sides to ensure a crispy crust during baking.
Fill the potato boats tightly with the stuffing, using your hands to form a small mound on top.
Preheat the oven to 250°C (480°F). Place the baking sheet on the lower rack. Bake for about 30 minutes until golden brown. Sprinkle with grated cheese 5-7 minutes before they are done.
