  • 40 g shpik (cured pork fatback, or use regular pork fat)
  • 120 g onion
  • 2 cloves of garlic
  • 1 chili pepper pod
  • 30 g ground breadcrumbs
  • 500 g cauliflower
  • 300 g pumpkin
  • 50 g hard cheese
  • ground paprika, salt, black pepper, vegetable oil, water

How to Make Oven-Baked Meatballs with Cauliflower

Dice the pork and add finely chopped shpik (cured pork fatback). The fat makes the meatballs juicy; you should add about 10% of the total meat weight.

Grind the meat for a few minutes until a smooth mince is formed.

Season the mince: add ground breadcrumbs, 2 teaspoons of ground sweet paprika, freshly ground black pepper, and salt to taste.

Knead the mince thoroughly. You can knead it with your hands, like dough. The better you knead, the neater the meatballs will be, and the seasonings will be distributed evenly.

Wet your hands with cold water. With damp hands, form small balls from the mince and place them on a board. From the specified amount of ingredients, I got 20 meatballs, slightly smaller than a ping-pong ball.

Pour two tablespoons of refined oil for frying into a pan. Place the meatballs in the preheated pan and quickly fry on one side until golden brown. Flip and fry until golden on the other side.

Blanch the vegetables for 5 minutes, then drain in a sieve.

Arrange the vegetables evenly between the meatballs.


Blanch the vegetables. Cut the cauliflower florets from the core. Peel the pumpkin and scoop out the seed cavity with a spoon. Dice the pumpkin flesh into cubes, roughly the same size as the cauliflower florets. Place the chopped vegetables in a saucepan, pour in boiling water, and salt to taste.

Blanch the vegetables for 5 minutes, then drain in a sieve. Reserve some of the vegetable broth – you will need it for baking.

Add the blanched cauliflower and pumpkin pieces to the fried meatballs. Distribute the vegetables evenly between the meatballs. Pour in 1/4 cup of the vegetable broth.
