Slice the meat against the grain into pieces about one centimeter thick. If the pork has thin layers of fat, the otbivnye (pounded meat cutlets) will turn out juicier.

Place the meat on a cutting board in a single layer. Cover with plastic wrap. Pound with a meat mallet on both sides. For this recipe, the pork should be pounded until it’s very thin, like a “rag” — the thinner, the better.

Sprinkle the pounded meat with svanskaya sol (a Georgian salt blend with spices and garlic) to taste. Svanskaya sol is a mixture of five spices, garlic, and salt. You can buy it pre-made, but it’s very easy to make at home. If you don’t have this salt, use regular salt and add a clove of garlic, ground red pepper, and black pepper.

Stack the pork pieces on top of each other. While we prepare the breading mixtures, the meat will absorb the spices and marinate.

In a deep bowl, crack a chicken egg and pour in the milk. Mix with a fork until smooth; no need to whisk, just combine.

In another bowl, add the panko breadcrumbs. Add the ground turmeric and finely chopped parsley. Don’t like parsley? Replace it with cilantro or dill.

Frying for about 3 minutes on each side.

Time to bread. First, dust the chops with all-purpose flour, shaking off any excess. The flour helps the other breading ingredients stick better, as the egg wash tends to slide off bare meat.

Lift a chop by the edge and dip it into the egg and milk mixture. Immediately place it in the colorful breadcrumb mix and gently coat it on all sides. The easiest way is to lay the chop flat and sprinkle the breading over the top with a teaspoon or spatula.

Pour refined, odorless vegetable oil or deep-frying oil into a non-stick skillet. Heat the oil for a few minutes until hot. Place two chops at a time into the hot oil. Don’t overcrowd the pan; if your skillet is small, fry one chop at a time. Fry for about 3 minutes on each side until golden brown.

Remove the chops from the skillet and place them on paper towels. This will allow the paper to absorb the excess oil, so the breading isn’t greasy.

They pair beautifully with creamy mashed potatoes, a fresh garden salad, or your favorite steamed vegetables.
