Pick the nettle leaves from the stems; it’s best to wear gloves to avoid getting stung. Young nettles are richer in vitamins. You can also cook with summer nettles, but it’s better to pick the top leaves from a mature plant. First, rinse the nettle leaves with cold water, then pour boiling water over them and let them sit for a couple of minutes.
