How to Make No-Bake Chocolate Cereal and Dulce de Leche Muffins

A bowl with cubes of softened butter, ready for mixing.

A spoon adding a portion of dulce de leche to the whipped butter in a bowl.

Adding the varenya sgushenka (caramelized condensed milk) in small portions.

Cut the softened, room-temperature butter into cubes. Add the vanilla sugar (or vanillin/vanilla extract) to the butter.

Whip the butter with a mixer on low speed. Beat for a couple of minutes until it becomes light in color.

Add the varenya sgushenka (a type of thick, caramelized condensed milk, similar to dulce de leche) in small portions. All ingredients for the cream should be at room temperature to ensure they mix well and the butter doesn’t separate.

Pouring the breakfast cereal – Nesquik chocolate balls – into a bowl.

Gradually add all the caramelized condensed milk, whipping the caramel cream until it’s smooth and fluffy. If for some reason the butter separates – creating unappetizing small lumps resembling cottage cheese – it can be fixed. Place the bowl with the cream in a pot of warm water for a while. The butter lumps will melt slightly, and you can whip the cream again until it becomes smooth.

If you’re making this dessert for children, skip this step. For the “adult” version, pour chocolate liqueur into the cream and mix well with the mixer.

Mix the chocolate balls thoroughly with the cream, and you can start forming the muffin-cakes.

Fill silicone muffin molds with the mixture. If you’re using metal molds, I recommend lining them with plastic wrap to make it easier to remove the set dessert. You can also portion the mixture into regular coffee cups, also lined with plastic wrap. Smooth the top of the mixture in the molds and place them in the freezer for 1 hour.

After an hour, remove the set muffins from the molds and dust them with cocoa powder through a sieve. You can add a pinch of ground cinnamon to the cocoa; this spice pairs well with chocolate and caramel.

And there you have it – delightful little cakes that are big on flavor and fun! These no-bake treats are wonderfully versatile. Feel free to experiment with different types of cereal or add-ins like chopped nuts or mini marshmallows. They are best served chilled, straight from the freezer, with a hot cup of coffee or a cold glass of milk.
