Ingredients for French-Style Chicken with Mushrooms and Potatoes
- 2 large chicken fillets
- 100 g fresh button mushrooms
- 350 g potatoes
- 50 g grated Parmesan cheese
- 60 g Provansal mayonnaise (or any high-quality, full-fat mayonnaise)
- 2-3 sprigs of rosemary
- 5 g ground red paprika
- 20 g potato starch
- salt, oil for frying
How to cook French-Style Chicken with Mushrooms and Potatoes
Peel and wash the potatoes, slice them into 1.5 cm thick rounds, and rinse again with cold water to wash off the starch.
Boil the potatoes for about 8-10 minutes after the water comes to a boil, then drain in a colander to let the water run off.
In a bowl, mix the ingredients for the chicken coating — ground red paprika, potato starch, and fine salt.
Cut thick pieces of the fillet and pat them dry with a paper towel. If you butterfly a chicken breast, half of it will be enough for one serving.
Coat the chicken in the mixture of starch, paprika, and salt. Heat frying oil in a heavy-bottomed skillet. Pan-fry the chicken until golden brown, about 2 minutes on each side.
Slice the onion into half-centimeter thick rings. Reheat the frying oil, brown the onion, and divide it into two parts. One part will be mixed with the potatoes, and the remaining onion will be placed on the chicken.
After the onion, sauté the mushrooms.
If the mushrooms are dirty, they need to be washed and dried with a paper towel. If there is no visible dirt, wiping them with a damp cloth is sufficient.
It’s better to separate the mushroom stems, slice them into rounds, and then mix them with the potatoes.
Take a deep baking sheet or a ceramic dish and generously grease the bottom with refined olive oil or another vegetable oil suitable for frying.
First, lay down a layer of the boiled potatoes and half of the fried onions, and season with salt to taste.
Next, add the pan-fried chicken fillet, on top of which you’ll layer the ingredients in the following sequence — fried onions, mushrooms, grated Parmesan, and a layer of Provansal mayonnaise (a popular, tangy Russian-style mayonnaise).
Finish the composition with sprigs of rosemary.
Preheat the oven to 230°C (450°F). Place the dish in the preheated oven and bake for 15-17 minutes until golden brown. Remove from the oven and let it rest for 5-10 minutes, allowing the meat to release its juices. As a result, the potatoes will soak up the delicious gravy made from the meat juices, mayonnaise, and melted cheese.
