Ingredients for Mujadara – Lentils and Rice:

  • 180 g green lentils
  • 180 g parboiled white rice
  • 3 large red onions
  • 1 teaspoon zira (cumin seeds)
  • 30 g butter
  • 40 ml olive oil
  • salt, pepper, vegetable oil for frying

How to cook Mujadara – rice with lentils.

Sort through the lentils to ensure no small stones, which are quite common in legumes, accidentally end up in your meal.

Place the lentils in a saucepan, add 1.5 liters of cold water, salt to taste, and cook over low heat for about 45 minutes after it comes to a boil.

In a separate pot, add the rinsed rice, a piece of butter, and pour in 250 ml of cold water, then salt. Place the pot on the stove, bring to a boil, and cover with a lid. Cook on low heat for 15 minutes, then wrap the pot in a towel and set it aside while the other ingredients are being prepared.

Peel the onions and slice them into thin strips. Heat vegetable oil in a frying pan, add the onions, and sprinkle with salt. Fry over medium heat for 10-15 minutes; they should be well-browned but not turned into chips.

Place a thick-bottomed pan on the stove, heat it up, add the zira (cumin seeds), and toast the seeds until they become fragrant and a light smoke appears.

Drain the cooked lentils in a sieve.

In a deep salad bowl, combine the cooked lentils and rice.

Grind the zira in a mortar and pestle. By the way, I sometimes add 1/3 teaspoon of pazhitnik (fenugreek seeds) to this dish, which I also toast beforehand with the zira. Pazhitnik has a bitter taste, so use it sparingly.

I recommend saving some of the fried onions for garnish – it will look beautiful on the plate!

Pour high-quality olive oil into the salad bowl.
