Ingredients for the 'Mandarinki' Cheese Appetizer

  • 2 large eggs
  • 1 plavleniy syrok (a type of creamy processed cheese, 100 g)
  • 30 g butter
  • 1 clove of garlic
  • 70 g mayonnaise
  • 2 large carrots
  • 15 ml olive oil
  • vegetable oil, salt, sugar, paprika, apple cider vinegar
  • small bay leaves and cloves for decoration

How to Make the 'Mandarinki' Cheese Appetizer for a Festive Table

Grate half of the chilled butter and the chilled processed cheese on a coarse grater. For this cheese appetizer, any creamy processed cheese will work well.

Hard-boil the large chicken eggs, cool them completely, and also grate them on a coarse grater. Add the grated eggs to the cheese and butter.

A large clove of garlic should be peeled and cut in half. Remove the sprout from the garlic to prevent the salad from becoming too pungent. Mince the garlic – either press it through a garlic press or grate it on a fine grater.

Add the mayonnaise. For this cheese appetizer recipe, I recommend a high-fat mayonnaise, preferably one made with olive oil, as it will taste better.

Now, let’s work on the “tangerine peel.” Grate the fresh carrots on a fine (cheese) grater. Place the remaining butter in a frying pan, add the vegetable oil, and then the carrots. Season with salt, add 1 teaspoon of sugar, and 2 teaspoons of apple cider vinegar. Sauté the carrots until soft, stirring to prevent them from burning – you’ve never seen overcooked tangerines, have you? The finished carrots will taste similar to those prepared for a classic dish called “fish under a marinade.”

Divide the chilled salad into 5-6 small portions. Grease your hands with vegetable oil, roll the salad into balls, and place them on a board.

Cool the carrots completely. Place 3 teaspoons of the sautéed carrots in your palm, then a salad ball, and carefully coat the ball with the carrots on all sides.

Insert small bay leaves into the top of the ‘tangerines’. If the leaves are brownish, you can try to revive their color by dipping them in boiling water for a few minutes; if the bay leaves are fresh, they will become brighter.

Next to the leaves, stick in some cloves. Keep the ‘Mandarinki’ cheese appetizer in the refrigerator until serving.

For an extra surprise, you can hide a single olive or a toasted nut inside each cheese ball before coating it with carrots. Serve them chilled on a bed of fresh lettuce or alongside crackers.
