Welcome to a recipe that redefines comfort food! 'Lenivye Golubtsy,' or Lazy Cabbage Rolls, are a brilliant shortcut to the beloved classic Eastern European dish. Instead of meticulously wrapping filling in cabbage leaves, we simply mix everything together and bake it into savory, tender patties. This version gets an extra flavor boost from gribnaya solyanka, a traditional mushroom and cabbage stew. It's a hearty, satisfying, and incredibly easy meal that brings all the traditional flavors to your table with half the effort.
Ingredients for Lazy Cabbage Rolls with Mushroom Solyanka
- 500 g gribnaya solyanka (a preserved mushroom and cabbage stew)
- 500 g chicken fillet or ground chicken
- 350 g cooked rice
- 250 g vegetable or tomato paste
- 100 ml water
- 50 ml olive oil
- sugar, salt, pepper, fresh herbs to taste
How to Make Lazy Cabbage Rolls with Mushroom Solyanka
First, empty a half-liter jar of gribnaya solyanka (a preserved mushroom and cabbage stew) into a bowl. Keep in mind that canned goods are often high in salt, so be cautious when adding more salt to the other ingredients!
Grind the chicken fillet using a meat grinder and add it to the bowl. This dish can be made with any ground meat, but in my opinion, chicken makes for a lighter version.
Next, add the cold cooked rice to the bowl. To ensure the golubtsy (cabbage rolls) hold together well and don’t fall apart, it’s best to use a sticky rice variety.
Thoroughly mix the filling, season with salt and freshly ground black pepper to taste. Place the bowl in the refrigerator for 10 minutes.
Now, let’s make the sauce for stewing the dish. Mix the thick vegetable paste with cold water and olive oil. Add sugar and salt to taste.
Take an oven-proof baking dish and pour the sauce into it. With wet hands, form large oval-shaped patties from the mixture and arrange them in the baking dish, leaving a little space between them. This recipe yields 9-12 rolls, depending on what you consider a ‘large’ patty.
Preheat the oven to 185°C (365°F). Place the dish in the center of the oven and bake for 30 minutes. If the sauce reduces too much during baking, simply add a little boiling water.
Serve the lazy cabbage rolls with mushroom solyanka hot, sprinkled with fresh herbs, and drizzled with smetana (a type of sour cream) or ketchup.
And there you have it—a wonderfully simple and delicious plate of Lazy Cabbage Rolls! This dish is best served hot, generously topped with fresh herbs and a dollop of cool smetana (a type of sour cream) to balance the rich tomato sauce. It’s the perfect meal for a cozy family dinner and pairs beautifully with a simple side salad or some rustic bread. We hope this clever recipe brings a taste of Eastern European comfort to your kitchen and becomes a new favorite!
