  • 100 g onion
  • 1 kg raw potatoes
  • 1 egg
  • 50 g all-purpose flour

How to Make Potato Dumplings with Meat

Let’s start with the ground meat. It needs to be kneaded well so the dumplings hold their shape and don’t fall apart during boiling. So, place the ground meat in a bowl, add finely chopped onion, and season with salt and pepper to taste. Knead the meat mixture thoroughly, like dough, and then put it in the refrigerator to rest and cool.

Peel the potatoes and place them in a bowl of cold water to prevent them from browning.

Using a fine vegetable grater, grate the potatoes. The grated potato will darken quickly, but don’t worry about it, as you’ll need to squeeze out the liquid anyway.

By the way, the most brutal potato-grating tool I ever saw was in a village. A piece of metal was frequently pierced with large nails, creating irregular holes with ragged edges. But the draniki (potato pancakes) we were treated to were the most delicious in the world.

Place the grated potatoes in a sieve lined with cheesecloth. Then, twist the cheesecloth and squeeze the grated potatoes firmly to remove as much moisture as possible.

Put the squeezed potato mass into a bowl, add salt to taste, and crack in a chicken egg.

Next, add the all-purpose flour and mix everything thoroughly. You will get a rather thick dough that is easy to shape into dumplings.

Now, take about 3 tablespoons of the potato dough and 2 tablespoons of the meat filling. Form an oval patty from the ground meat and a round pancake from the potato dough. Place the meat patty in the center of the potato pancake.

Bring 3 liters of water to a boil, salt it, and add a bunch of fresh herbs and spices. Using a slotted spoon, carefully place the dumplings into the boiling water. Cook for about 20 minutes over low heat.
