  • 500 ml (about 2 cups) water
  • 2 teaspoons khmeli-suneli (a traditional Georgian spice blend)

How to Cook Italian-Style Chicken Gizzards

Chicken gizzards are usually sold cleaned, but I still recommend inspecting, cleaning, and sorting through them. Trim off any fat or yellow membranes and rinse them thoroughly. Place the gizzards in a large pot and cover with hot water. Bring to a boil and cook for 5-10 minutes over medium heat. It’s always a good practice to parboil any offal, discard the first water, and then proceed with the recipe.

Next, make the sour cream sauce. In a bowl, combine the all-purpose flour and smetana (a type of sour cream). Season with salt and khmeli-suneli (a traditional Georgian spice blend) to taste. Pour in cold water and mix until the sauce is smooth and free of lumps.
