- a few yellow onions
- 2/3 cup tomato juice or grated tomatoes
- 5–6 cloves of garlic
- 4–7 potatoes
- 2–4 eggplants (aubergines)
- 500 g (about 1.1 lbs) cheese or bryndza (a brined sheep's milk cheese; feta is a good substitute)
- 100 g (about 7 tbsp) medium-fat butter
- about 2 tablespoons all-purpose flour
- 1/2 liter (about 2 cups) pasteurized milk
- 2 large eggs
- table salt, ground black pepper, spices (of your choice)
How to Make Greek Moussaka, or 'Shepherd's Dish'
Step One — Preparing the Minced Meat
Finely chop all the onion and garlic. Sauté the onion in a frying pan until soft and golden. Add the tomato juice or grated peeled tomatoes to the onion. Continue to simmer the onion with the tomato for 3–4 minutes. Add the finely chopped garlic. Add the minced meat. Then, mix everything well. Reduce until the liquid has evaporated. Finally, add salt, ground pepper, and spices to taste.
Step Two — Frying the Vegetables, Preparing the Cheese
Peel, wash, and slice the potatoes into thin rounds, no more than 0.5 cm (about 1/4 inch) thick. Wash the eggplants, pat them dry, and slice them into planks, no more than 0.7 cm (about 1/3 inch) thick. Fry the potato slices for 2–3 minutes in hot vegetable oil. Transfer to a plate. Fry the eggplant slices in the oil as well until medium-soft. Place them on a paper towel to drain excess oil. Grate the cheese or bryndza on a coarse grater.
Step Three — Making the Sauce
Melt the butter in a small non-stick saucepan. Add the flour to the melted butter. Stir thoroughly. Reduce the heat to low. Gradually pour in the cold milk, stirring with a spoon. When the sauce thickens, remove it from the heat and season with salt. Let it cool down. Then, add 2 eggs to it. Whisk until smooth.
Step Four — Assembling the Dish
You can use any deep baking dish for this recipe. Arrange the eggplant slices as the first layer, followed by the potatoes, and then the minced meat. You can lightly salt the vegetable layers. Cover everything with a thick layer of grated cheese or bryndza. Pour the sauce over the cheese and spread it evenly over the surface.
Step Five — Baking
Bake the dish at 180°C – 190°C (350°F – 375°F). The cooking time is 30–35 minutes (until a golden crust forms on top). Do not place the moussaka on the top rack of the oven. It’s best to bake it in the middle. Let the moussaka cool slightly before serving.
And there you have it—a beautiful, homemade Greek Moussaka, ready to impress! For the best experience, let the Moussaka rest for at least 20-30 minutes after baking. This allows the layers to set, making it much easier to cut into clean, perfect squares. Serve it warm, perhaps with a simple Greek salad of tomatoes, cucumbers, and olives to complement its richness. We hope you enjoy every single bite of this 'Shepherd's Dish' and that it brings a taste of sunny Greece to your home. Kali Orexi (Enjoy your meal)!
