How to Make Fluffy Sourdough Pancakes
I use sourdough starter for these pancakes. To keep the starter supply going, you have to feed it regularly with water and flour. As a result, you get discard that needs to be used somewhere—my thrifty nature protests against throwing away food. Pancakes, crepes, and pies are wonderful by-products that accompany homemade sourdough bread baking. Both rye and wheat starters will work; the main thing is that it should be active, bubbly, and smell delicious!

After two hours, stir the batter, crack an egg into the bowl, pour in vegetable oil or melted and cooled butter, and add the sugar and salt.
Mix the batter again and let it sit at room temperature for 1 hour, covering the bowl tightly with plastic wrap or a damp towel.
An hour later, the batter rises again, becomes bubbly, and smells incredibly good. This means the sourdough has worked its magic, and you can start frying the pancakes.
