  • 200 g low-fat tvorog (farmer's cheese or curd cheese)
  • 100 g celery stalks
  • 1 onion
  • 40 g leek
  • 2 cloves of garlic
  • 1 chicken egg
  • 40 g oat bran
  • 10 g flax seeds
  • 15 g whole grain flour
  • salt, vegetable oil for frying, black pepper
  • 2 chicken eggs for serving

How to Make Farmer's Cheese Patties with Celery and Poached Egg

Heat 5 ml of refined vegetable oil in a frying pan and add the minced garlic. Sauté for a few seconds to infuse the oil with garlic flavor. Then, add the finely chopped onion and sauté until translucent.

Dice the celery stalks into very small cubes and add them to the sautéed onion.

Now, add the sliced leek. Reserve a small part of the stalk for garnishing later.

Sprinkle the vegetables with a small pinch of table salt and simmer over low heat for 7 minutes.

Meanwhile, prepare the other ingredients for the mixture. Press the low-fat tvorog (a type of farmer’s cheese or curd cheese) through a fine-mesh sieve to ensure there are no lumps in the finished patties.

Add 4 g of fine table salt, crack in a chicken egg, and mix the ingredients. Instead of one large chicken egg, you can use 4-5 quail eggs, which will result in a dish with less cholesterol.

Let the celery and onion mixture cool slightly, then add it to the tvorog. Never add very hot vegetables to the mixture. While it’s not a disaster, it’s best to combine ingredients that are at a similar temperature.

Add the oat bran to the bowl. This healthy product is rich in dietary fiber, and I recommend completely replacing wheat flour with oat bran when making syrniki (sweet cheese pancakes) or oladyi (small thick pancakes).

Form small patties from the tvorog mixture and coat them in whole grain flour. Heat vegetable oil in a frying pan and place the patties in the hot oil.

Fry for 2-3 minutes on each side until golden brown.

Pour 1 liter of boiling water into a saucepan, add a tablespoon of table vinegar, and crack in a chicken egg. Cook the egg for 2 minutes—this method is known as poaching.
