Add root vegetables and spices – parsley, an onion, a garlic clove, a couple of bay leaves, and a few black peppercorns. Cover with cold water and salt. After it comes to a boil, skim off the foam and simmer for 1 hour. Strain the broth, and you can use the leftover chicken for a salad or sandwiches.

Green beans, also known as string beans, come in various stages of maturity. This year, I got some that were slightly overripe, with tough fibers in the pods, which take longer to cook. It’s best to parboil such beans until they are half-cooked. I boil them in salted water for about 20 minutes, separately from the other vegetables.
