- 100 g cooked quinoa

How to Make Chicken Patties with Quinoa in a Creamy Sauce
Thinly slice the young cabbage. If it’s not in season, you can substitute it with Napa cabbage, as regular white cabbage will take longer to cook.
Sprinkle the cabbage with a pinch of salt and gently squeeze it with your hands to release its juice and soften it.
Add the cooked quinoa to the cabbage. You can cook the quinoa in advance; it will keep in the refrigerator for several days in an airtight container. To cook, add one cup of quinoa to cold water, rinse thoroughly, and drain through a fine-mesh sieve. Sometimes quinoa can be bitter, so rinsing is important. Pour two cups of cold water over the rinsed quinoa, bring to a boil, and salt. Cook on low heat for 20 minutes with the pot tightly covered.
Add the ground chicken. This recipe uses ground skinless chicken fillet. At home, you can pass diced fillet through a meat grinder with a medium plate or finely chop it with a cleaver on a cutting board.
