  • 20 g powdered gelatin
  • 15 g soy sauce
  • 4 g sea salt
  • 1/2 teaspoon dried thyme
  • ground black pepper to taste

How to Make Chicken Breast Ham with Gelatin

Remove the skin from the chicken breast and cut the fillet off the bone. Place the prepared fillet in a glass, stainless steel, or enamel bowl (a plastic container will also work), sprinkle with sea salt or regular salt, and refrigerate for 12 hours. After 12 hours, dice the salted meat into small cubes.

Season the fillet. You can use seasonings to your taste, making the ham with different spices each time. In this recipe, we use dried thyme—sprinkle the meat with the herb, crushed almost to a powder.

Pour in the soy sauce. I use what is known as “dark” soy sauce. It’s a concentrated sauce with a rich flavor and a very dark color; 1-2 teaspoons are sufficient.

Take a wide knife or a meat cleaver. Chop the mixture on a cutting board for a couple of minutes, mixing the ingredients simultaneously.

Place the prepared mixture onto plastic wrap and roll it into a log, using several layers of wrap—don’t be shy with it. The better the ham is wrapped, the more secure it will be. Twist the ends and tie them tightly with a strong thread. Leave the wrapped ham at room temperature for 30 minutes.

Place the ham in a pot. Add enough cold water to cover it completely. Bring to a boil. Cook for 12 minutes over medium heat after it starts boiling. Remove the pot from the heat, cover it tightly, and wrap it in a towel. Leave it like this for 1 hour. Afterward, remove the ham from the water and immediately place it in the refrigerator. To speed up the cooling process, you can put it in a bowl of ice. Leave the ham in the refrigerator for 12 hours. You can eat it after a couple of hours, but you probably won’t be able to slice it into beautiful, thin pieces.
