Ingredients for Chicken Baked in an Oven Bag

- 4 onions
- 6 cloves of garlic
- 4 carrots
- 1 teaspoon oregano
- 2 teaspoons Imeretian saffron (marigold powder)
- 2 teaspoons fenugreek seeds
- 30 ml olive oil
- thyme, rosemary, salt, pepper, lemon, an oven bag
How to Cook Chicken Baked in an Oven Bag
Cut the chicken into serving-sized pieces. Cut the chicken leg quarters at the joint to separate the thigh and drumstick. It’s best to bake pieces of roughly the same size in the bag so that the meat cooks evenly. If you put whole wings and thighs together, the wings will overcook while the meat near the bone on the thighs might remain undercooked.
Wash the cut pieces and pat them dry with a paper towel.
In a food processor, mince 2 medium-sized onions and the peeled garlic. Rub the meat with the onion-garlic mixture, trying to push some of it under the skin.
Add the spices — Imeretian saffron (a powder made from marigold petals, often used in Georgian cuisine), thyme, oregano, rosemary, and fenugreek seeds. Add about 2.5 teaspoons of fine table salt. Rub the pieces well with the spices and salt, then refrigerate for 6-8 hours.
To prevent the chicken from burning and to keep it juicy, place it on a bed of vegetables.
For the vegetable bed, slice the remaining onions into thick rings. Cut the carrots into thick rounds.
Chicken baked in an oven bag is the perfect dish for those who value their time. I think the oven bag was invented by someone who hated scrubbing baking sheets after cooking meat and disliked greasy food. You have to agree, it’s pleasant to cook when grease isn’t splattering everywhere, the dishes and stove stay perfectly clean, and in less than an hour, you have roasted chicken on the table. Unlike parchment paper and foil, the bag allows you to watch what’s happening in the oven.
Pour olive oil into the bowl with the marinated chicken and mix with your hands, ensuring the oil coats the pieces on all sides. Measure out about 60 centimeters (24 inches) of the oven bag, and first lay down a layer of onions and carrots. Carefully arrange the marinated chicken on top of the vegetables.
To make ties, cut 1-centimeter (0.4-inch) wide strips from the bag’s film. Tie both ends tightly.
Do not place the ties right up against the contents; leave some free space.
Place the bag with the chicken and vegetables on a baking sheet. Preheat the oven to 220°C (425°F). Place the baking sheet on the middle rack of the oven. Cook for 35-40 minutes, then remove from the oven and let it rest in the bag for 15 minutes.
And there you have it—a beautifully roasted chicken, tender and infused with the rich flavors of herbs and spices, all thanks to the magic of an oven bag. The best part is the delicious, savory juices collected at the bottom, perfect for drizzling over the chicken or a side of mashed potatoes. Serve this dish hot, straight from the bag, with the roasted vegetables. It’s a comforting, wholesome meal perfect for any day of the week. We hope you enjoy this simple yet elegant way of cooking chicken!
