  • 400 g chicken fillet
  • 500 g pumpkin
  • 150 g onion
  • 50 g leek
  • 4 cloves garlic
  • 20 g butter
  • 10 g vegetable oil
  • 25 g all-purpose flour
  • 120 g smetana (a type of sour cream)
  • salt, nutmeg

How to Make Chicken and Pumpkin Stew

First, prepare the pumpkin. Cut off the top, scoop out the seeds with a spoon, and cut it in half. Peel the skin and either grate the flesh or chop it finely.

If you’re making a jack-o’-lantern for a holiday, you’ll have to work a bit harder and scrape the flesh from the walls with a spoon. It’s a bit tough, but it saves you from using a grater.

Wash the chicken fillet, pat it dry, and cut it into cubes. Both chicken breast and thigh fillets work well for this recipe. Make sure they are boneless and skinless.

Slice the white part of the leek into rings. Cut one large onion into half-moons. Crush the garlic cloves with a knife and remove the skins.

Pour refined vegetable oil into a Dutch oven, add butter, and place it on the heat. Once the butter has melted, add the garlic cloves first, and after a few seconds, add the sliced onion. Sauté for 5-6 minutes. Add the chicken fillet to the sautéed onion and fry for a few minutes until the meat pieces are coated in oil.

Place the shredded pumpkin on top of the chicken and sprinkle with about 5 g of fine table salt. Cover the Dutch oven tightly and leave it on the stove over low heat for about 35-40 minutes.
