Ingredients for Chicken and Coconut Curry

  • 800 g chicken legs (thighs, drumsticks, or leg quarters)
  • 1/2 fresh coconut (or 50g unsweetened shredded coconut)
  • 250 g onions
  • 3 cloves of garlic
  • 1 tsp ground paprika
  • 1 tsp ground hot pepper
  • 1 tsp dried basil
  • 2 tsp mustard seeds
  • 2 tsp coriander seeds
  • 2 tsp zira (cumin seeds)
  • 30 ml olive oil
  • 80 g heavy cream or smetana (a type of sour cream)
  • one handful of curry leaves

How to Make Chicken and Coconut Curry

For a juicy chicken curry, use cuts of the bird that have more muscle fiber, like the legs. Thighs and drumsticks are also excellent choices.

Marinate the chicken legs in spices for 20-30 minutes


Remove the skin from the chicken legs; it’s not needed in this recipe. While Indian cuisine is known for its spice, it’s also quite wholesome. Simmering the chicken with the skin on would make the curry too greasy. We’re aiming for succulent, tender meat that falls easily off the bone.

So, sprinkle the skinless chicken drumsticks with salt, add two finely grated onions, ground paprika, hot pepper, and basil. Rub this spice mixture all over the legs and let them marinate for 20-30 minutes to absorb the flavors.

Sauté spices and vegetables in oil

While the chicken is marinating in the onion and spice mixture, start making the curry base. Heat olive oil in a pan, add zira (cumin seeds), mustard seeds, and coriander. Heat for about 3 minutes until they release their aroma. Then, add crushed garlic and two roughly chopped onions. Sauté the vegetables and spices until the onion becomes almost translucent.

Add a large handful of curry leaves to the sautéed onions. Curry leaves are typically fried for no more than 2 minutes, stirring constantly.

Next, add the coconut. For this amount of chicken, half a fresh, finely grated coconut is sufficient, but you can also use unsweetened shredded coconut (about 50g). Cook this aromatic mixture for a few more minutes over low heat.

Add the chicken legs along with their marinade to the curry base, pour in the cream or smetana (a type of sour cream), cover the braiser tightly, and cook for 1 hour and 30 minutes on low heat. If needed, you can add a little chicken broth or, if you have it, coconut milk to the pot, as the chicken should be stewing, not frying.
