How to Make Carrot Muffins with Nutmeg

Close-up of finely chopped orange zest on a cutting board.

Finely chop the orange zest with a knife.

A bowl containing orange zest and finely ground almonds.

Add the ground nuts to the bowl with the orange zest.

Freshly grated carrots in a bowl, ready for the recipe.

Grate the raw carrots on a coarse grater.

Wash the orange thoroughly, then place it in boiling water for half a minute. After scalding, wash the orange thoroughly again and zest the thin orange layer. This thorough washing is necessary for store-bought or market oranges. Fruits picked from your own garden may not need such treatment. Finely chop the orange zest with a knife.

Toast the almonds or any other nuts for a few minutes in the oven or on a dry skillet. Let them cool and then grind them into a fine crumb using a rolling pin or a food processor. Add the ground nuts to the bowl with the orange zest.

A bowl with muffin batter, with orange juice and segments being added.

Add orange juice and orange segments to the bowl.

Flour, semolina, and baking powder being added to the wet ingredients.

Add all-purpose flour, semolina, and baking powder.

Add granulated sugar, and to balance the sweetness, add a pinch of fine salt.

Squeeze the juice from half of the orange. Peel the white pith from a few orange segments. Add the orange juice, orange segments, and neutral olive oil (odorless) to the bowl. Mix the ingredients thoroughly and let it sit for a few minutes for the sugar crystals to dissolve.
Add the all-purpose flour, semolina (a type of coarse wheat flour), and baking powder. In principle, you could use only flour. However, the semolina gives the batter a pleasant, crumbly texture and is not noticeable in the finished baked goods.

Spices, cinnamon and freshly grated nutmeg, being added to the muffin batter.

Add ground cinnamon and grate nutmeg on a fine grater.

Add ground cinnamon and grate the nutmeg on a fine grater. Only freshly grated nutmeg will give the muffins their unique flavor and incredible aroma. Pre-ground spices often lose their potency.

Fill paper liners with 80-100 g of batter, depending on the size of the liner. Place the paper liners with the batter into a muffin tin. This helps the muffins bake evenly, prevents them from burning, and keeps them from sticking. Plus, homemade muffins in paper liners look quite presentable.

Bake for 25 minutes.

Place the muffins in the preheated oven (180°C / 350°F). Bake for 25 minutes. You can check for doneness with a wooden toothpick; if it comes out clean with no batter crumbs, the muffins are baked through and ready.
