Ingredients for Braised Cabbage with Apple Cider and Mushrooms
- 1 kg white cabbage
- 1 onion
- 1 carrot
- 300 g cremini mushrooms
- 200 ml hard apple cider or homemade apple wine
- 1 teaspoon honey
- 1 clove garlic
- 20 ml vegetable oil
- salt to taste
- a few sprigs of parsley for garnish
How to Make Braised Cabbage with Apple Cider and Mushrooms
Finely dice a large onion. Crush a garlic clove with a knife and mince it. Pour refined vegetable oil (odorless) into a Dutch oven. Heat the Dutch oven with the oil, add the chopped onion, and after a couple of minutes, add the minced garlic. Sauté the onion and garlic over low heat for 5 minutes, stirring to prevent the vegetables from burning.
Thoroughly wash a carrot with a brush and peel it with a vegetable peeler. Shred the peeled carrot into thin strips or grate it on a coarse vegetable grater. Add the grated carrot to the pot with the sautéed onion and mix. Cook the carrot and onion for another 5 minutes. By the way, don’t throw away the carrot peels; put them in a bag and freeze them. They are a great ingredient for chicken or meat broth, as the carrot skin is full of nutrients, just make sure to wash it well!
Remove the outer leaves from a small head of white cabbage and cut the head in half. Remove the core. Shred the cabbage into thin strips, about 2-3 millimeters wide. Add the shredded cabbage to the Dutch oven. Pour in the apple cider or homemade apple wine. Increase the heat to bring the cider to a boil. Reserve about 1 tablespoon of cider.
Wipe the cremini mushrooms with a damp cloth. If the mushrooms have soil on them, they need to be washed! Coarsely chop the mushrooms and add them to the other ingredients. Salt everything to taste. Cover the Dutch oven with a lid. Simmer the cabbage over low heat for 40 minutes, keeping the Dutch oven tightly covered. If the liquid evaporates too quickly, the vegetables might burn!
Mix a teaspoon of honey in a tablespoon of cider. About 5-10 minutes before it’s done, remove the lid from the Dutch oven and add the dissolved honey. Mix everything well. Increase the heat to evaporate more of the liquid.
Finely chop a few sprigs of parsley. Sprinkle the braised cabbage with apple cider with the chopped herbs. Serve warm or hot. It’s very delicious with Borodinsky bread (a dark, slightly sweet sourdough rye bread).
