Ingredients for Braised Beef with Prunes

  • 500-600 g (approx. 1.1-1.3 lbs) boneless, lean beef
  • 1 large or 2 medium carrots
  • 2-3 medium-sized onions
  • 50-100 g (approx. 1/2-1 cup) pitted prunes
  • 2 tablespoons tomato paste (or 1/2 cup tomato juice)
  • 2-3 cups of water
  • 1 level tablespoon of salt
  • 10-15 black peppercorns
  • 1-2 bay leaves
  • Refined sunflower oil (or other neutral vegetable oil) for frying

How to Make Braised Beef with Prunes

Cut the beef into cubes, approximately 2×2 cm (about 1 inch). It’s easier to do this while the meat is still slightly frozen.

Peel and wash the vegetables. Finely chop the onion or cut it into quarter rings. Grate the carrot on a coarse grater.

Heat the sunflower oil in a deep skillet over medium heat. Add the onion and sauté, stirring occasionally, until soft.

After 3-4 minutes, add the meat to the onion and carrot mixture. Sear the meat, stirring, until it changes color.
Pour 2–2.5 cups of water into the skillet—enough to cover the meat. Cover with a lid and let it simmer over medium heat for about 30-35 minutes. The gravy should be gently bubbling.

Once the meat is tender, it’s time to add the prunes! You can use either dried or smoked prunes, but I prefer the first option: it’s softer and has a more pleasant aroma. Rinse the dried fruit under running water, add about ten prunes to the skillet, and stir.

In half a cup of water, dissolve the tomato paste and pour it into the skillet. Instead of paste, you can use tomato juice or puréed fresh tomatoes—in that case, there’s no need to dilute with water.
